Simple Shepherd’s Pie

This is a simple (my kid friendly) version

1 lb ground beef (or lamb)
2 small onions, chopped
salt and pepper to taste
3 cups frozen corn (your fav veggie/s)
1.5 lbs potatoes
3 tablespoons butter
1/2 cup whole milk

Cut potatoes into small pieces (leave skin on) and boil.
While potatoes are cooking, brown meat and onions with salt and pepper to taste.
Drain excess fat.
When potatoes are soft enough to pierce easily with a fork, mash with 2 tablespoons butter and milk.
Add salt and pepper to taste.
Layer ground beef, vegetable, and mashed potatoes in casserole dish. Divide remaining tablespoon butter into small pads and place on top of mashed potatoes. Bake at 350° for approximately 30 minutes, or until potatoes begin to brown.




There’s an enormous amount of recipes available. This one is very simple! And everyone in my family (kids) likes it.
I use what veggies I have or want that day.
I’m sure you know how easy it is to change this up, in so many ways. From adding to potatoes, like sour cream, cheese, etc.. And many recipes add gravy, sauce or tomato paste, worcestershire , etc. to meat (me & my family just happen to love seasoned ground beef cooked up without all that)
