Being busy with moving … I went to an old throwback, tuna noodle casserole. I added green chilies this time & it was good. Most recipes call for peas, so that’s optional (any preferred or in-season vegies).
Sautee chopped onions in a couple tbs of butter. Mix a can or 2 (or 3 😀 ) of drained tuna with cream of mushroom soup. Add a little milk.Mix in some cooked egg noodles (or any noodles you like to use) & a little shredded cheddar cheese and season (fresh cracked black pepper, sea salt & dash of fresh nutmeg). Put in a casserole dish (or ramekins) and top with a mixture of panko bread crumbs & shredded cheddar cheese.
Although this time I topped with french fried onions bcuz they were looking at me.
Bake at 350 degrees for about 20 minutes.
