yes, I include lots of images. Cuz I love them…it’s art. It’s the colors; the green & purple kale, yolk of fresh local eggs & red pepper jelly. The pretty chickens & their eggs ♥
😀 but I put most AFTER recipe, for those who want to get to the point

I’m cooking for myself, a fav is a fried egg on stir-fried kale (steamed is good but I like the crisp/texture thing). It’s fast, high in protein, meatless (sometimes 😀 ) with vitamins & minerals. Tastes good too!
As much as I like kale AND eggs, I still like to add a little somethin, in this case yummy Red Pepper Jelly ♥
Salsa is good, or any favorite…like fresh tomatoes/tomato salad, etc.
#BACON is ALWAYS good! If you eat meat :p & I do!

Ingredients:
1 or 2 eggs
1 bunch of kale (I used green & purple)
1 -2 T olive oil
1 clove garlic (optional)
grated cheese (I had pecorino available & love that & parm of course; also optional)
sea salt
fresh ground pepper

Remove ribs and stems from kale & chop or slice, depending on size you pref. In saute pan with EVOO, sweat garlic (I removed so it wouldn’t burn), add kale & stir fry (I toss/flip) just until wilted or tender. Add salt & pepper to taste. Set aside with lid on to keep warm.
In REAL butter cook egg to your preference (that can even be scrambled) with salt & pepper.
With tongs place kale on plate & top with egg.
Top with Red Pepper Jelly.

Or preferred addition as mentioned in ingredients.
Kale is great with many options→ onions, mushrooms, etc..

Went to eat outside but…forgot my red pepper jelly, so I just moved indoors. It was a nice little drizzling of rain though…I should’ve stayed out there. #Rain is a rare gift here; along with the bit of a cool down that comes with it.

I actually tried some drops of orange oil on kale & it was good. I used so much caution though that I barely taste any.
