Sheet Pan Kielbasa with Sweet Potato, and Zucchini

The whole idea behind sheet pan meals is cooking a complete meal start-to-finish on one pan. That means very little cleanup is needed after dinner. A winner for me. I know they’ve been around a long time and recently became popular again; I’ve been liking it… A LOT! 😁
Today I used –
kielbasa (2 packages)
2 sweet potatoes
2 small zucchini
I added a few pieces of onion for their flavoring
2 TBS olive or coconut oil
Cut them into approximately 1 1/2 inch pieces.
Spread out on sheet pan. Drizzle & toss or brush with oil. Season vegetables! Salt, pepper, garlic (optional) &/or your favorite all purpose seasoning.
Bake at 425 for 15-20 minutes or when sweet potato is fork tender, and that’s it! A delicious dinner…one pan. 😉

I did it again, overcrowded & ended up getting out a second sheet pan. And it’s still full. I see you “could” go with 1 sweet potato 😉
