Well I made enough to freeze a mason jar full, so this time I didn’t have to do it again. I’m going to do that again…& more. I liked having that! 🌶 😁

Slow cooker barbacoa
In same skillet used to sear the beef.. make a roux with equal parts oil & flour, season, cook flour taste out (5 minutes?), add sauce from crock of slow cooker (I placed crock on stovetop next to skillet & ladled it in), stir as it thickens, reserve 1 cup, add beef, stir to blend. Good fresh flour •tortillas, •refried beans, •cheese, •salsa or pico de gallo ; •smear refried beans on center of tortilla, meat on top of that, then cheese and salsa, fold and place seam side down in 9×13 baking dish. Pour reserved sauce over burritos and top with cheese. 350° oven about 20 – 30 minutes or until desired doneness on cheese topping.
