I went ahead and made pasta with ham and corn. That way I won’t feel the need to cook for a couple days…or 3…4
I would like chopped green onions in this!

Pasta with Ham and Corn
1/2 package of your favorite pasta
1 ear of corn , grilled & cut off cob
2 tablespoons olive oil
1/2 cup half and half
1 small shallot, minced
Roasted garlic cloves, mashed into garlic paste (or minced garlic cloves… most say 2, to me that means 4).
1/2 cup fresh grated parmesan cheese
1/2 teaspoon Italian seasoning
salt and pepper – to taste
1) Boil a pot of salted water and cook pasta until al dente.
2) While the pasta is cooking. In a medium skillet heat olive oil and cook shallot, garlic and add ham.
Cook for 5 minutes and add Italian seasoning & half and half.
3) Drain pasta and add corn and ham mixture.
Add cheese and salt and pepper.
This would be perfect to serve with a side salad and crust bread!
Great way to use up your leftover Easter ham!
I add some asiago also…I like the flavor.
