1/2 package of your favorite pasta (ditalini)
diced ham
1 ear of corn , grilled & cut off cob
2 tablespoons olive oil
1/2 cup cream (or half & half)
1 small shallot, minced (optional)
Roasted garlic cloves, mashed into garlic paste (or minced garlic cloves… most say 2, to me that means 4).
1/2 cup fresh grated parmesan cheese
salt and pepper – to taste (Italian seasoning optional)1) Boil a pot of salted water and cook pasta until al dente.2) While the pasta is cooking. In a medium skillet heat olive oil and cook shallot, garlic for couple minutes, add ham and corn, sauté until heated through.Add seasonings & cream.3) Drain pasta and add corn and ham mixture.
Add cheese and salt and pepper.
Servexwith a side salad and crusty Italian bread!I add some asiago also…I like the flavor.
