Half-ass Potato Salad

The kind you put together with what you’ve got. 😀
No radishes,  no celery, no pickles (I don’t do pickles anyway)….
That narrows it down to
Potatoes
Hard boiled eggs
Green onions (scallions)

INGREDIENTS

Hard boiled eggs

2 lbs of Yukon Gold potatoes (you can leave the peel on if you want), cut into 1-inch pieces
1 cup of miracle whip
2 teaspoons of mustard (dijon)
Splash/dash of raw organic apple cider vinegar
Tbs or to taste (keep tasting) sugar
1/2 cup thinly sliced green onions
Coarse sea salt
Freshly ground pepper
Paprika
   Yes Oprah,  grown ass powerful white women use paprika too…always have. Just sayin’

METHOD

 In a large pot, cover potatoes with cold, salted water (1 teaspoon salt). Bring to a boil, reduce heat to a simmer. Simmer until the potatoes are tender when pierced with a fork, about 20 minutes. Drain, and rinse with cold water to stop the cooking.
Cook eggs at same time.
In a large bowl, whisk together the miracle whip, sugar, vinegar and mustard. Add a little salt and pepper. Add the potatoes and use a rubber spatula to gently combine. Add the rest of the ingredients, again gently combining.
Season to taste with salt and pepper.
Sprinkle paprika over top
