4 oz. fresh Mexican Chorizo, casings removed and crumbled
1/4 onion, minced
1/2 cup smoked gouda cheese
1/2 cup cream cheese
Salt and black pepper to taste
12 Jalapeno Peppers, split in half and seeds removed
Preheat oven to 400 degrees.
Saute onions the chorizo and cook over medium heat, stirring with a wooden spoon, until oils begin to release and sausage starts to crisp up.
Remove from heat.
Measure out cheeses and add sausage mixture, stirring to combine. Stuff each pepper with a spoonful of the cheese mixture and bake 15 minutes.
The chorizo will turn the cheese orange, so if you want it to look prettier, save some cheese for topping after stuffing.
