Easy! One dish oven roasted lemon orange and garlic chicken… with PRESERVED LEMONS & PRESERVED ORANGES 😀
Because that’s what is in my pantry 😉

Alright…I didn’t follow a recipe so I’m testing my memory here.
Put oven on 350º
I used chicken thighs & chicken drumsticks. Seasoned chicken.
Got a large bowl and mixed –
EVOO 1/4 cup to start
Garlic, lots. At least 4 cloves
Fresh cracked black pepper
Slices of preserved lemons, rinsed salt off
Slices of preserved oranges, rinsed salt off
(Fresh would be good)
I taste as I go although the citrus is tart. Want to make sure seasonings are good to go.
Add chicken parts to bowl, seasoned the chicken again (I only did that to make sure all chicken was seasoned) & drizzled a little more evoo. Then I tossed it REALLY GOOD & THOROUGHLY. Placed chicken skin side up on roasting pan, drizzled a tiny bit of liquid from bowl on top of chicken. Not too much! Chicken will already release juices & dark meat left on bone with skin stays moist…very. I did add pats of butter on chicken 😀
I believe I checked on it after an hour. I wasn’t satisfied with crispness or color…close but just wanted a little bit more, especially on flip side, so I turned on broiler to finish…couple minutes (stand watch when using broiler, dont walk away) 😀

Googled ingredients for anyone needing details (except I used chicken parts rather than whole chicken) and i didn’t make sauce.
And I did not have fresh oregano, I did have fresh basil, so that’s what i used… flowers still attached & all, lol. Must be okay, it tasted great & no adverse effects. Along with Italian seasoning, garlic salt, onion salt & Goya Adobo with orange bitters sessoning.
What can I say? Make it your own with seasoning you like?

This chicken was falling off the bone but moist & DELICIOUS
And YES, that’s pats of butter on top of chicken too :p
