So this is a recipe for a lemon loaf, I have posted a lemon loaf recipe before BUT this one doesn’t have yoghurt and is equal if not more delicious. Anyway an excellent way to use lemons and its a super easy loaf. This isn’t actually my recipe, all credit to the Edmonds Cookbook.
3/4 cup sugar
1 teaspoon grated lemon rind
2 cups self raising flour
1/4 teaspoon salt
1/2 cup milk
1/4 cup lemon juice (approximately 1 lemon)
1) Preheat oven to 180C
2) Cream butter, sugar and lemon rind in a large bowl until light and fluffy.
3) Add eggs ad beat well.
4) Sift in dry ingredients stirring in alternatively with milk
5) Pour into a greased 22cm loaf tin.
6) Bake for 45-50 minutes or until loaf springs back when tightly touched.
