I’m over the moon (pun intended); the lemony (hA!) sugar coating is the trick! DELICIOUS

This is a follow-up/improvement to previous post/recipe. Although those cookies are indeed a good treat, I was still left wanting (& searching for) a more powerful punch of flavor…in this case LEMON. Because I knew that with the Girl Scouts version I thought the flavor was instantly and agressively clear; like tasting a slice of lemon covered with powdered sugar 😆 🍋 by the way, on my second try I added twice the amount of lemon juice and lemon zest, which worked for same result. BUT still missing that initial flavor blast.

Sugar-Dusted Lemon Cookies

These sweet-tart treats taste just like the beloved Girl Scout cookies, Savannah Smiles®.

INGREDIENTS

  • 1 c. unsalted butter
  • 1 c. confectioners’ sugar
  • 2 tbsp. lemon juice
  • 1 tbsp. lemon zest
  • ¼ tsp. salt
  • 3 c. all-purpose flour

DIRECTIONS

Preheat the oven to 325 degrees F. Line baking sheets with parchment paper or a silicone baking mat.
In the bowl of a stand mixer fitted with the paddle attachment, beat butter until creamy. Gradually add 1/2 cup (60 grams) of confectioners’ sugar. Beat on medium-high speed until light and fluffy. Mix in the lemon juice, zest, and salt. With the mixer speed on low, add the flour in three additions, mixing until incorporated and scraping down the bowl after each addition.

Scoop the dough by the tablespoon and roll each dough portion into a ball. Gently flatten the dough balls with your fingers and shape into a half-moon. Place each cookie on the prepared baking sheets, at least one inch apart.

Remaing powdered sugar
1⁄4 teaspoon, or to taste, lemon juice powder Or lemonade powder mix.. such as kool aid

*Tip: I find it easier to roll into log with parchment paper & chill first. Then it’s easier to cut equal slices and for half moon shape (although to me it’s a lemon wedge) cut circles in half. They don’t spread out so you can put them pretty close together.

1/4 to 1/2 cup lemon juice powder

OR…”if” you can’t get that product, I found online another method; mix powdered sugar with powdered lemonade mix, like *kool-aid.

The simple solution for improving those lemon cookies is to mix lemon juice powder with powdered sugar aka confectioner’s sugar.
