Easy. Good. You don’t really need a recipe for this. 4 chicken breasts (mine were large), 1/2 cup pesto, fresh mozzarella and tomato. I want to throw in that I did marinate mine in buttermilk half the day; don’t know if that’s why it turned out so moist. Anyway, season chicken breasts with salt and pepper (I couldn’t resist a little garlic powder), on lined baking sheet rub pesto sauce all over chicken, place slices of fresh mozzarella on each and tomato slices. Bake at 400° for 30 – 40 minutes (depends on size of chicken) or until thermometer reads 165° and cheese is starting to brown. I removed pan from oven and added parmesan over it. Also with drizzled evoo. Tastes really good. Stayed very moist and tender.
