Fried Chicken and Roasted Vegetables
This was so that my daughter could eat it…on her whole30 diet; SO coconut flour seasoned with salt, pepper, garlic powder, onion powder and/or favorite all purpose seasoning (ours is McCormick Himalayan Pink Salt Pepper Garlic All Purpose Seasoning); I went old school with brown paper bag shake 😉.
Then heat enough oil (I used coconut oil just this one time) to come up sides of chicken, fry until internal temperature is 165°. Vegetables I used: carrots sliced/cut into small sticks, sliced mushrooms, green beans and red onion; tossed in evoo and same all purpose seasoning; I did drizzle a little balsamic vinegar over them too 😉 in 375° oven about 20 minutes (?) or until carrots are tender. 🥕🤭
