Of course you can use preferences, such as corned beef (yumm, my favorite but my son brought me some deli pastrami), Russian dressing or your favorite.
This Recipe:
English muffins
pastrami/corned beef (or both)
sauerkraut
swiss cheese
thousand island
Directions:
Oven on high (425º)
parchment paper (or foil) on baking sheet will help you with clean up…big time.
lay muffins out on baking sheet, put dressing on muffins, on bottom side of each muffin layer a few folded slices of pastrami/corned beef, then swiss cheese.
I heat sauerkraut on stove in small sauce pan separately and put it on sandwich when its done. I don’t have an answer for that except it’s what I grew up with…never changed it.

As for the sauerkraut – it makes sense to keep the moisture out of the sandwich.
