SAUTÉED CHERRY TOMATOES WITH FRESH CRUSH BASIL OLIVE O

INGREDIENTS
3 tablespoons Queen Creek Olive Mill Fresh Crush Basil Olive Oil
1 small garlic clove, minced
1 pound cherry tomatoes
1 teaspoon fresh oregano, chopped
Pinch of kosher salt and freshly ground black pepper
1/4 cup white wine
INSTRUCTIONS:
During a warm summer this is a dish that is easily prepared ahead of time and can be used in a salad or served warm with grilled pork chops or rib steak.
In a medium skillet, heat 2 tablespoons of Fresh Crush Basil Olive Oil on medium high. Add garlic and cook for 2 to 3 minutes. Add the tomatoes, oregano, salt and pepper.
Reduce heat to a simmer. Stir well and cook until tomatoes soften, about 10 to 15 minutes. Remove tomatoes from pan and set aside. Add wine to pan, scraping up brown bits.
Reduce liquid slightly and pour over tomatoes. Finish with remaining 1 tablespoon of Fresh Crush Basil Olive Oil, salt and pepper.
