TACOS!
I don’t know anyone who DOESN’T like #TACOS! That’s just not right; they’d have to go! (J/k). BTW, I know this is Wednesday jajaja. Well, there’s enough leftovers for a couple days! They’re SO darn delicious. …I really could eat them, at least , for a straight week!
And get this…tomorrow I’m going to make an authentic Mexican street food (shredded/sliced/diced…whatever beef) style tacos !

😉 ➼ Except we use the little flour tortillas.

And although I’m going to nab his avacado condiment, we use Mexican cheese…usually queso fresco but I recently found a super finely grated cojita, which is stronger aged type, i liked it! A little finely sliced iceberg for freshness. We don’t add cilantro but you know how tacos are…various toppings.

I usually do the marinade in video…truth is…I’m lucky to live close enough to border to easily fond a Carniceria that will sell it in marinade! DELICIOUSNESS!
However, my daughter just gave me a halfass new Slow Cooker recipe (I’ll still use my favorite heavy Lodge Cast Iron pot)…
They really liked it so I’m trying it.

She also made guacamole, Cuban black beans and rice. Had some shredded lettuce, cheese and salsa too ♡
So this was a good and large cut of beef… with a dry rub full of flavor! I love Goya seasoning with bitter orange in it, Ancho chilies, those skinny chilies jajaja…in photo, onions, garlic and stock rather than water…for more flavor & Bay leaves. Taste to adjust seasonings, especially salt & pepper.
