Salmon Patties


Or Salmon Cakes, fish cakes. yes we love them.

So easy to make and a good use for canned salmon too. Of course I’ve made them with top notch fresh salmon. But usually go with canned (smart shoppers).
(Although in my house…I double this!)
1 can of canned salmon
1 egg
1/4 cup chopped onion
1/2 cup ground cracker crumbs
Sea salt & fresh cracked black pepper to taste
1 tbs olive oil
(Okay. .so I use more 😛 , especially in between batches)

Drain (and reserve a little) liquid from salmon. I like to clean skin & bones off. These bones won’t hurt you but I still like to get the bulk of them off. Mix salmon, egg, onion, cracker crumbs, salt & pepper together. Form into patties, if too dry add some of reserved salmon liquid. Heat oil in frying pan & gently place patties in pan. Brown on each side (aprox 2 minutes per side, turning gently. Drain on paper towel and serve.

Goes great with fried potatoes and onions & a fresh salad. A fresh salad of baby spring mix is enough for me. It goes with your favorite sides. What’s in your garden…pantry.
