Turkey Salad with Cranberry Relish Sandwiches 

I could use all the usual complimentary adjectives here in telling you how good this turned out, but I think I’ll just quote my daughter as she walked by to take care of her emptied plate “that was amazing”. Period.

I posted a link below for anyone who needs to be precise or even prefers another recipe; it sounds yummy. It uses mayo & yogurt (which you can easily replace in mine; my family is strictly in the Miracle Whip camp). And apples (grapes are good too). Also, I just happened to have a jar of my other daughter’s homemade cranberry relish so we thought “let’s try it” to our delight it worked ➬ amazingly. We did have a choice because I do have a bag of pomegranate infused dried cranberries; THAT’S a tough decision! We went that direction because the relish is delicious & it’ll expire sooner. I added walnuts only to mine! Another ingredient rest of my family is not into.
As you can see from all this & the enormous amount of recipes out there, this is a very flexible go-with-your-preferences type dish.
And this was a spur of the moment decision…all of it. We (me & my daughter), thinking what to eat, looking at leftovers from a 20 lb turkey, both said “Turkey Salad”. Our first try & another one of those times that left us thinking “wow, what took us so long? Why haven’t we been making this forever already?”. Better late than never; we will now. AND I WILL WRITE DOWN MEASUREMENTS ♡
This would be delicious on any choice of breads, rolls, croissants, lettuce wraps, tortilla wraps…..or just give me a fork! We used King’s Hawaiian Rolls.

Approximate 😉 ➣ 😆 ingredients:
4 cups shredded turkey
2 stalks chopped celery
1/2 small sweet onion
Couple/3 spoons of cranberry relish

Dressing:
1 1/4 cup of miracle whip (it’s hard to measure when another person is adding another ‘scoop’ while you’re running food processor  (humor)
1 tbsp dijon mustard
1 tsp salt*
1/2 tsp pepper*
*taste as you go

Directions:
Shred or chop turkey. Put in bowl. Chop celery & onions, mix into turkey along with salt & pepper.
In another bowl mix dressing, mustard, salt & pepper. Stir into turkey mix.
Add a couple spoons of cranberry relish, stir, taste to see if it needs more salt, dressing or cranberries.

We would have loved this on fresh croissants or lettuce wraps, HOWEVER, we had King’s Hawaiian Rolls staring at us & we both said “yes!”. They did make an “amazing” flavor combination with salad.
Carefully, with bread knife slice rolls open & top bottom section with salad. You can also spread dressing, mayo or some of the cranberry relish on roll before putting salad on it. My daughter really likes her miracle whip so she did that. Me? I was generous with salad & grabbed a little plastic fork because I don’t have a problem cleaning my plate if any spills off sammy 😲.
