Oven-Barbecued Chicken Thighs

– it works! Delicious!

Made with oven-baked home fries. Ha, that makes this another sheet pan dinner, although this one needs attention. AND another “winner winner chicken dinner”.😆

I finally tried this oven method, it has been going around the Internet for a few years.
As for recipe, I’m simply going with what we love…Sweet Baby Ray’s BBQ Sauce.
There are delicious homemade sauces, I’ve done some, but hey…it’s Monday.
Measurements are approximate, I use pinches and sprinkle seasoning all over. 😉

6 bone-in skin on chicken thighs
1 – 1 1/2 cups BBQ sauce
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper

Clean chicken, pat dry, and trim off any excess fat. Season both sides of chicken with seasonings. Place chicken, skin side down, on lined (foil, parchment paper, silicone sheet) baking sheet. Put in 400° oven, 25 minutes.
Remove from oven, brush with your favorite BBQ sauce, flip (carefully to not lose skin, I love my fish spatula!), brush other side with bbq sauce, return to oven, now skin side up, for additional 7 minutes.
Repeat without flipping anymore, brush with sauce again, back in oven another 7 minutes.
Last time 😜, brush with more sauce, raise temperature of oven to 475°, return to oven for additional 5-7 minutes. or when chicken is thoroughly cooked, an internal temperature of 165°. Allow to rest about 10 minutes; if you can 😆

I put the potatoes/fries on a sheet pan and in oven with chicken after the first 25 minutes.

Next day’s lunch 😀
