Baked Acorn Squash with Brown Sugar and Butter

 

Ingredients

  • 1 acorn squash, cut in 1/2
  • 2 tablespoons brown sugar
  • 2 tablespoons butter
  • Salt

Directions

Preheat oven to 375° F.

Scoop the seeds and stringy pulp out of the squash cavities and discard. I’ve always simply put butter & brown sugar in each cavity, halfway thru I use basting brush to brush it all over edges. Season with salt and pepper, to taste. Place them on a baking sheet (parchment paper makes life easier), cut side up. Bake in the preheated oven for about 1 hour until the squash is tender when pierced with a fork. Let cool a little. We scoop out what we want because no one in my family can eat a half by ourselves. And it scoops out like butter 😀

BTW, I usually put a half slice of bacon on each half, lying it across cavity.
