Chicken Nuggets

Yes, we love chicken, especially crispy chicken.

Here I used a 2 step dredging method; coating chicken pieces in egg and seasoned breadcrumb mix seals in moisture and gives a crisp crunch that’s delicious.

On this occasion I fried them in coconut oil. Compromise? 😉 🐔🍗

By the way, I doubled this 😜

INGREDIENTS

2 boneless, skinless chicken

1 cup breadcrumbs

1/2-1 cup all-purpose flour

1/3 cup grated Parmesan

2 teaspoons coarse salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon sweet or smoked paprika

*favorite seasoning

2 large eggs, lightly beaten w/

1-2 tablespoons water

4 Tablespoons coconut oil for frying

Honey Mustard or Spicy Ketchup, for dipping

INSTRUCTIONS

lay chicken out on plastic wrap and even out with a rolling pin; or use a skillet like a hammer 😆 lightly pound until chicken pieces are even, so it’ll cook evenly.

Cut chicken into desired size squares … okay, maybe some are triangles; let’s just say “pieces”.

Here’s where you need mise en place!

Have one shallow dish with mixed egg/water,

a second shallow dish with flour, breadcrumbs, parmesan cheese and seasonings

Have cut chicken near shallow dishes; an assembly line.

Heat (preferably cast iron) skillet to medium, then add a couple tablespoons of cooking oil.

Working in batches, dredge chicken pieces into egg mixture to coat. Then coat chicken in breadcrumb mixture. Add to skillet in a single layer and cook until the sides begin to turn golden brown, about 3-5 minutes. With tongs, flip each piece of chicken over and cook until both sides are golden brown, about 2-4 minutes. Remove nuggets to a paper towel lined platter/plate to drain. Repeat with the remaining chicken. I sprinkle with salt again while still hot.

Serve with favorite dipping sauces. Ours are the usual honey mustard, ranch, BBQ sauce

My granddaughter likes mixing hot sauce in ketchup too. She’d probably like Sriracha mayo 😍🌶🔥
