Ecuadorian Magic Potion aka Aji Criollo

AJI CRIOLLO
Inspired by Chimborazo and Brasa Rotisserie; Serves 4+
INGREDIENTS
3 garlic cloves, minced
2 Tbsp olive oil
4 jalapeño peppers, seeded and stemmed
1 big bunch cilantro
1/2 bunch parsley
2 green onions (or a couple of tablespoons of chopped onion)
juice from one lime
1 Tbsp apple cider vinegar
1/2 cup mayo (optional, but encouraged)
salt to taste
INSTRUCTIONS
Fry the garlic cloves in oil for about 30-60 seconds until fragrant, then throw everything but the salt into a food processor or blender. Blend until smooth. Salt to taste.
It’ll last in the refrigerator for up to three days.
