One Pot Spaghetti and Sausage

I had Italian sausage that needed to be cooked. I also had homemade stewed tomatoes that my daughter made, from tomatoes in her garden. Also had basil from her garden. So I was winging it. And yes! It worked. Delicious!

Ingredients –

1 pound ground Italian sausage (or ground beef)

1/2 onion, chopped

1/2 cup sweet peppers, chopped (green bell or other)

4 cloves garlic minced

2 cups chicken broth

2 1/2 cups stewed tomatoes

2 teaspoons dried oregano

1 teaspoon dried basil or 1 tablespoon fresh

1 pinch of sugar

Salt and freshly ground black pepper to taste

Pinch of crushed red pepper

16 ounces dried spaghetti broken

1/2 cup Parmesan cheese grated

Instructions –

Brown sausage (or beef) in skillet. Add onions and peppers, cook until translucent. Add garlic and cook additional minute or 2. Add stewed tomatoes (I had delicious homemade from my daughter & her garden, yumm), broth and seasonings. Bring to boil, add broken spaghetti, lower to simmer, cover and cook 15 to 20 minutes. Taste for seasoning adjustments.

Serve with a drizzle of good evoo and top with Parmigiano-Reggiano, Parmesan, Pecorino-Romano, or Grana Padano
