Orange Soda Orange Chicken

My daughter really liked this one! She packed her lunch for work before everyone ate… hahaha!

Not quite a sheet pan dinner with other pans being in the mix, but was still easy.

Ingredients –

2 lbs chicken breast

1-2 cups flour

Marinade –

1/2 cup orange soda

zest of 1/2 orange

Sauce –

1 cup orange sod

zest and juice of 1/2 orange

2 Tbs honey

2 Tbs white vinegar

2 Tbs soy sauce

1 tsp ground ginger

1 tsp hot sauce (optional)

1 Tbs minced garlic

Slurry –

1/4 cup cornstarch mixed with 1/4 cup water

Instructions –

Cut chicken into bite sized chunks

Marinate with Orange Soda and orange zest in fridge.

When ready to cook, Preheat oven to 400 degrees.

Remove chicken from fridge, and toss in seasoned flour until evenly coated

Cover sheet pan with parchment paper, foil or nonstick spray, place chicken pieces on sheet pan in single layer

Bake for 20 – 30 minutes, depending on size of chicken pieces.

In a heavy skillet mix together 1 cup orange soda, zest and juice of 1/2 an orange, soy sauce, minced garlic, vinegar, ginger, and honey

Bring to a boil over medium heat

In a cup mix together the cornstarch and water (slurry)

Stir slurry into orange sauce, turn to simmer.

Remove chicken from oven, and pour into skillet of orange sauce, stir until well coated.

Garnish – optional – sesame seeds, green onions/scallions (my favorite), or orange slices/zest…

Serve hot with rice and vegetable preference.

Okay, so the lights burned out in my kitchen, for real. Timing 😀

Flour chicken pieces and put in 400° oven

Make orange sauce, have ready.

Make rice, vegetables, everything before pulling chicken from oven

Pour crispy chicken into sauce, stir till well coated, serve hot.
