Basically, evoo, season, sear all sides; remove, add 2 cups broth (or water; for whole30 diet don’t use Better than Bouillon 🤷‍♀️🤦‍♀️), put rack in and place roast on rack, pressure cook pork roast for approx 25 minutes, depending on size of roast. I go by internal temperature of pork, because you can add time, until internal temperature is 145°. Acorn Squash…cut in half, scoop out seeds, spread with ghee, season, bake at 400° 30-40 minutes…until tender.

I might as well make some good broth whenever I can….freezer 😉⤵️
