Fried Potatoes and Onion

EASY & DELICIOUS ~ Fried Potatoes and Onions

You know I don’t really measure or time often. This recipe is very flexible; from the amount (I’ve been known to have a few potatoes with my onions), to how long and stirring. If I make a small amount I can flip without a spatula, but like in this instance…if too heavy I have to use a spatula. And having a lot of crispy parts is the goal.

Ingredients

  • 2 tbs bacon drippings or cooking oi
  • 1/2 of a sweet onion, sliced
  • 4 to 5 peeled and sliced potatoes
  • Salt and pepper

Directions

Add enough oil just to cover the bottom of skillet and heat over medium high. Add the onions and potatoes (adding onions first prevents potatoes from sticking to pan), salt and pepper to taste ( potatoes can take salt liberally). Cover pan. You can stir after a couple minutes to mix onions with potatoes. After 8-10 minutes you can stir, flipping over with a spatula, cover and potatoes should be done after another 8-10 minutes, depending on how thinly they’re sliced. It’s easy to tell when they’re done. And you do want some (or if like us…a lot) to be crispy.

I can’t believe I cooked for 40 years without a mandolin!

So good it’ll make anything else served with it irrelevant.
