This has been a family favorite ‘comfort food’ from the time my kids were small. I realized it most when my son became a single parent and would call me for recipes…from the grocery store…
I am pleased when my kids do this or request a dish from their childhood…and that they are all good cooks themselves ♡ I don’t take all the credit; their grandmother (and other relatives) are Italian (good cooks of course) Sicily ➺ de Luca ➺ 💓 😆🍴♨ It’s in their genes.
Pork Chop and Scalloped Potato Casserole
Directions
5 – 6 thick cut pork chops
Salt & Pepper
Seasonings (all purpose and/or favorites)
4 tbs butter
6 potatoes, sliced very thin
1 can cream of mushroom soup
1 1/4 cup milk
Instructions
Preheat oven to 350°
Season pork chops on both sides with S & P, along with favorite seasonings (like garlic powder, paprika, onion powder, adobo, all purpose seasoning, etc..), set aside.
Butter a casserole dish (I used a 9×13, my chops were big but smaller works)
Heat a large skillet over medium-high heat & melt 2 tbs of the butter, then add in your seasoned pork chops.
Cook them until browned on both sides, remove and set aside.
Add the remaining 2 tbs butter to the skillet and add the chopped onion, cook until soft.
Add the condensed soup to the cooked onions and gradually stir in the milk, set aside.
Slice potatoes and place in an even layer in the prepared baking dish.
Place cooked pork chops on top of potatoes, then pour soup mixture over the chops.
Make sure everything is even in the baking dish.
Cover and bake at 350F for 30 minutes.
Remove the cover and bake for an additional 40 minutes.
Sprinkle lightly with parsley if desired.
