How to Make the Best Potato Salad –®

I made potato salad again today, although a couple changes in ingredients Well, I have a lot of potatoes and eggs; so with Vidalia onion, fresh chives, pickled red onion and sweet bell peppers on hand…it went from classic to “make-it-work potato salad”😉

By the way, my hard boiled eggs turn out perfect every time…when I boil them softly for 3 minutes, cover, remove from heat and let sit for 12 minutes. Then I cool them off with cold water. I don’t know if it’s true that putting a little vinegar in water makes peeling egg shells easier, but as long as they keep being easy to peel…I’m going to continue. 🐣
